This is our second ever release of a Sparkling Pinot Gris and a true celebration of orchard fruit aromas and flavours.

On the nose, the wine displays delightful notes of cooking apples before moving into an inviting front palate that leads with dessert pear flavours, giving way to a mid palate of juicy yellow plum. The elegant finish begins with luscious honeyed peach alongside layers of toasty brioche.

The final result is a wonderfully rounded and expressive sparkling wine and perfect aperitif.

The fruit for this wine came from both our Greyfriars and Monkshatch vineyard sites.
50% of the fruit was hand picked by our amazing volunteers in October 2024 with the handpicked Pinot Gris component crushed and de-stemmed and the handpicked Pinot Blanc whole bunch pressed. 50% of the fruit was machine picked and pressed instantly. Fermentation of the base took place in stainless steel tanks with 50% of the resultant base wine going through malolactic fermentation.
Bottled in June 2025 and produced using the traditional method, this wine has matured in our cellars for just over 12 months on lees and cork prior to its release in August 2026.
