2025’s ripeness has enabled us to produce a darker, bolder and more vibrant style, reflecting our winemaking philosophy of creating the best wine we can from whatever the vintage gives us, rather than being wedded to a particular style year-in year-out.

This wine boasts a generous palate of heavy cherry flavours, moving from red cherries to glacé cherries and then creamy strawberries. The lovely texture and weight from the residual sugar and well integrated tannins is balanced by a superb freshness.

Tasting Notes & Food Pairing

The perfect pairing for this wine is a sunny afternoon, but it would also work wonderfully with charcuterie and
cheeses such as Wensleydale and cranberries, along with dishes like a classic prawn cocktail starter or even a good old fashioned Eton mess!

Winemaking Techniques

The grapes for this wine were machine harvested in September 2025 from our 2011,
Pinot and Monkshatch Far Plots. The final wine is a blend of four different components. 15% of the blend
was fermented on skins for 7 days. 85% was soaked for 18 hours prior to pressing. 33% of the wine
was left with residual sugar and only 50 % of the wine was put through malolactic fermentation.

The final blend was bottled in February 2026 and released in Spring 2026.
