This is the sixth release of our vintage Blanc de Blancs made from 100% Chardonnay grapes from the superb 2016 vintage.

The grapes for this wine were handpicked the third week of October 2016 from our Monkshatch and Tractor Shed vineyard plots. The wine has benefitted from an extended period of cellar ageing, refining the balance of the wine as well as developing its complex flavours.

This classic and approachable style of Blanc de Blancs boasts a vibrant mousse and generous baked apple notes with a hint of honey on the nose. The palate leads with bright green apple flavours, giving way to fresh lime before finishing with delightfully subtle notes of vanilla and acacia honey.

This wine is great on its own as an aperitif but would work equally well with pan-fried skate in a lemon butter sauce.

The grapes were handpicked, and then gently whole bunch pressed with the wine fermented and aged in used oak barrels. The base wine was put through full malolactic fermentation. It was bottled for secondary fermentation in July 2017 and has matured on lees for over 8 years prior to release.
